Ingredients:
1 pound ground beef
1 large onion, chopped
2 cloves garlic, minced
4 large potatoes, peeled and diced
3 large carrots, sliced
4 cups beef broth
1 cup milk (or heavy cream for extra creaminess)
1 cup shredded cheddar cheese
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
1. Cook the Beef: In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
2. Combine Ingredients: In the crockpot, add the browned ground beef, chopped onion, minced garlic, potatoes, and carrots. Pour in the beef broth.
3. Cook in the Crockpot: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes and carrots are tender.
4. Add Cream and Cheese: About 30 minutes before serving, stir in the milk (or heavy cream) and shredded cheddar cheese. Season with salt and pepper to taste. Let it heat through until the cheese is melted.
5. Serve: Garnish with fresh parsley if desired. Enjoy the creamy, hearty soup!
