Garlic Butter Steak and Potatoes Skillet

Ingredients:

 

1 lb. steak bites (sirloin or ribeye work great)

 

1/2 lb. small potatoes, quartered or halved if large

 

2 tbsp olive oil

 

3 tbsp butter, divided

 

4 cloves garlic, minced

 

1 tsp thyme (fresh or dried)

 

1 tsp rosemary (fresh or dried)

 

Salt and pepper to taste

 

Fresh chopped parsley for garnish

 

 

Instructions:

 

1. Cook the Potatoes: In a large skillet over medium heat, heat 1 tablespoon of olive oil and 1 tablespoon of butter. Add the potatoes, season with salt and pepper, and cook, stirring occasionally, until golden brown and tender, about 10-15 minutes. Remove the potatoes from the skillet and set aside.

 

 

2. Cook the Steak: In the same skillet, add another tablespoon of olive oil and 1 tablespoon of butter. Add the steak bites in a single layer, making sure not to overcrowd the pan (work in batches if needed). Season with salt and pepper. Cook the steak for 2-3 minutes per side until browned and cooked to your liking. Remove the steak from the skillet and set aside.

 

 

3. Make the Garlic Butter Sauce: In the same skillet, lower the heat to medium. Add the remaining 1 tablespoon of butter, minced garlic, thyme, and rosemary. Cook for 1-2 minutes until the garlic is fragrant, stirring constantly to avoid burning.

 

 

4. Combine and Serve: Add the cooked potatoes and steak back into the skillet, tossing everything together to coat in the garlic butter sauce. Cook for another 1-2 minutes until everything is warmed through. Garnish with fresh chopped parsley, and enjoy!
