Kielbasa Soup with Potatoes Recipe
Ingredients:
1 lb kielbasa sausage, sliced
1 tbsp olive oil or butter
1 medium onion, diced
2-3 cloves garlic, minced
3-4 large potatoes, peeled and diced
2 large carrots, sliced
3-4 cups chicken broth (or vegetable broth for a lighter flavor)
1 can diced tomatoes (optional, for added richness)
1-2 cups cabbage, shredded (optional for added texture)
1 tsp smoked paprika
1/2 tsp black pepper
Salt to taste
Fresh parsley, chopped (for garnish)
Instructions:
1. Sauté the Kielbasa: In a large pot, heat olive oil over medium heat. Add the sliced kielbasa and cook until browned on both sides. Remove and set aside.
2. Cook the Vegetables: In the same pot, add the diced onion and cook until it becomes translucent. Add the garlic and sauté for another 1 minute until fragrant.
3. Add the Broth and Veggies: Pour in the chicken broth, diced potatoes, and carrots. Bring to a boil, then reduce the heat to a simmer.
4. Season and Simmer: Add smoked paprika, black pepper, and salt to taste. If using diced tomatoes or cabbage, add them now. Let the soup simmer for about 20-25 minutes, until potatoes and carrots are tender.
5. Add Kielbasa Back In: Stir the kielbasa back into the pot and let it heat through for a few minutes.
6. Garnish and Serve: Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
Tips:
For a creamier texture, you could blend half the soup before adding the kielbasa back.
Add a sprinkle
of grated cheese if you enjoy a bit of extra richness.
