Ingredients
2 sirloin steaks, about 1-inch thick
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
3 tablespoons unsalted butter
3 cloves garlic, minced
Fresh herbs, like rosemary, thyme, or parsley (about 1 tablespoon, chopped)
Instructions
1. Season the Steaks: Generously season both sides of the steaks with salt and pepper.
2. Sear the Steaks: Heat olive oil in a cast-iron skillet over medium-high heat. Once hot, add the steaks and cook for 3–4 minutes on each side, depending on your preferred doneness.
3. Add Butter and Garlic: Reduce the heat to medium-low. Add the butter, garlic, and fresh herbs to the skillet. Tilt the pan slightly, and use a spoon to baste the steaks with the melted garlic herb butter. Continue basting for another 1–2 minutes.
4. Rest and Serve: Remove the steaks from the skillet, allowing them to rest for 5 minutes before slicing. Drizzle any remaining garlic herb butter from the skillet over the steaks before serving.
